Who else can raise their hand and say they’ve had way too many sweets and other junk food this holiday season?! I lost all control 😳. It didn’t help that I have not had my Plexus products for most of that time (that’s a story for another post.. you’ll want to stay tuned, but let’s just say I remember how I felt two years ago and am excited there is a package coming in the mail in the next few days 💃🏼). I am ready for fresh, whole foods and I’m not even going to wait for January 1st! 😆
Eating healthier, nutrient dense foods does not have to be boring or bland. I seem to get more creative in my cooking when I focus on healthier eating. I don’t make up a lot of recipes on my own, but I tweak many to fit my tastes or to omit things I don’t want in my diet. This fruit salad today is one example. I made this version for our Christmas Eve brunch and it was really good, but a little too sweet. It had ingredients I don’t need or want, and it also makes a HUGE salad. I decided to make this cleaned up, smaller version with some of the fruit I had left in my fridge. The original recipe is great for a crowd and if I need to make it for a group again, I will follow it with my omissions .. this recreated recipe is just as good, in my opinion! 😋
Lemon Poppy Seed Fruit Salad
Small apple – cut up
1 kiwi – peeled and cut
1 mandarin orange – peeled and broke into sections
(Pomegranate arils and cut up banana if wanted – I didn’t have any on hand)
1 tsp lemon juice
1 – 1 1/2 tsp honey
1 tsp light olive oil
1/2 tsp poppy seeds
Add fruit to a bowl. Mix all dressing ingredients in a small bowl and stir until well blended. Pour dressing over fruit and stir well. Enjoy!
